Dinner's probably still a couple of hours away from being done (beef stew using a cubed up london broil that I had frozen a couple of months ago), so in the meantime I snacked on a few tortilla chips dipped in this delectable item made in El Paso. If this is considered medium, mild, if there is such an item, must be really bland. I would have preferred hot, but my grocery store only had medium. Still, it's pretty good. You really can taste the chilis, but they in no way overpower the cheese. The texture's nice and smooth, and doesn't even need to be nuked to soften up a bit.

Regarding dinner, the nice thing about beef stew is that it's a great way to get rid of random things in the fridge that are sort of at that "use-it-or-lose-it" stage: onions and potatoes that are starting to get a little soft, that leftover half can of beer, etc.

I'm sure that's why stew was invented.Just have to be careful what yo leave in the fridge, though. Don't leave any bait in there, for instance.

Stews and soups are great ways to get rid of whatever you have lying around. Same with chili.

Denny, I can sympathize with the queso problem. I'd never seent his brand before in my grocery store, and most have a rather plastic or gelatinous texture until heated up a bit. I tried this one and was pleasantly surprised. In my ad agency days, I used to work on the Pace salsa account, and think there just might be something to concept that any sort of Southwestern food items made in the NE are bound to blow cookies, unless they're made by specialty boutique producers.

You can order this queso online from www.desertpepper.com, but you'd probably spend as much in shipping as you would for gas to get all the way from Houston to El Paso, road-tripping. I hope my grocery store continues to carry it; it does carry a lot of gourmet items in addition to the mass brands.

I think we're going to lose the contest big-time, so I'd be happy to share some virtual chips and dip with you.
